Eliza

CVM, short for ChocoVilcaMundo, is a specialty coffee project led by the Bernard Uhe family in Loja, southern Ecuador.

Drawing on their coffee production experience in Ibagué, Colombia, the family established three farms in Ecuador. Since their first harvest in 2021, their coffees have consistently placed among the top entries at the Cup of Excellence and the Ecuador Golden Cup, quickly earning recognition for their quality and potential.

Eliza is one of these farms, located at approximately 1,700 meters above sea level and managed by Martin in partnership with CVM. Of the project’s three farms, Eliza has the mildest and most stable growing conditions. This environment allows the coffee cherries to mature evenly, developing a round, smooth structure in the cup.

 

The Sidra variety is particularly expressive here. Rather than relying on intense or extravagant aromatics, Eliza’s coffees are defined by balanced sweetness, a soft texture, and a long, gentle finish that unfolds comfortably with every sip.
