ORIGIN STORY
Alasitas Farm | Caranavi, Bolivia
A partner farm of Agricafe, located in Caranavi — Bolivia's largest coffee-producing region.
The farm's name comes from the Aymara word Alasitas, the traditional Andean festival held annually in La Paz. Established in 2012 by the Rodriguez family, Alasitas was created at a time when coffee production across Caranavi was rapidly declining. Its mission: to serve as a regional reference point, showing local farmers what modern agricultural practices could achieve.
We visit Alasitas every year — a farm whose work continues to shape the direction of Bolivian specialty coffee.

Coco Natural Processing
This Geisha is processed using the Coco Natural method, developed in-house by the Rodriguez family.
In the Bolivian highlands, high humidity and frequent rainfall have long made traditional natural drying difficult — leading to mold and over-fermentation during the drying stage. To solve this, Pedro Rodriguez drew on his earlier experience at a peanut processing company and introduced the Coco Dryer, a mechanical drying system adapted for coffee.
Drying runs for approximately 35 hours, cycling on and off every 30 minutes, with temperatures held below 40°C. Between cycles, workers turn the coffee by hand — around the clock — to ensure even drying throughout the lot.
