Decaffeinated coffee is not simply “coffee without caffeine.” When high-quality green coffee is combined with a careful process, it can become an attractive coffee in its own right.
This Ethiopian decaf is made with coffee from Uraga, a region known for its high altitude, fertile soil, and abundant rainfall. In this area, where skilled processing practices support excellent coffee quality, Alemayehu Washing Station manages both washed and natural processing, producing consistently stable results.
This project began with the idea that decaffeinated coffee can also express a wide range of flavors when good green coffee and advanced processing technology come together. Rather than focusing only on the absence of caffeine, this coffee highlights the character and flavor of specialty coffee through the combination of quality raw material and an environmentally friendly decaffeination method.
Swiss Water Process
The Swiss Water Process removes caffeine using only water and activated carbon filters, without chemical solvents.
It is designed to remove caffeine while preserving the coffee’s flavor compounds as much as possible. As a result, this method helps maintain the natural character of the coffee and keeps the final cup closer to the original taste of the beans.
