Washed Geisha
Lot #002 is a washed Geisha coffee. Each cherry is hand-picked at peak ripeness, when its sugar content is at its highest, then sanitized and carefully sorted on the same day.
The cherries are mechanically depulped without the use of water and fermented slowly for 48 hours in sealed tanks, with the mucilage left intact and protected from light and oxygen.
After fermentation, the coffee is washed with clean water and dried gradually for approximately 15 days in a solar parabolic dryer. Every carefully controlled step of this unhurried process allows the distinctive character of Geisha to fully unfold in the cup.
