Washed Process
The cherries are hand-picked at optimal ripeness, when their sugar content is at its highest. On the day of harvest, they are carefully sorted and sanitized to remove lower-quality cherries, then mechanically depulped without the use of water.
The coffee is fermented for approximately 78 hours in plastic tanks protected from light and oxygen, with the mucilage left intact. After fermentation, the remaining mucilage is washed away with clean drinking water, and the coffee is slowly dried for around 18 days in a solar parabolic dryer until it reaches the desired moisture level.
