SNAP Specialty Coffee
In Ethiopia, coffee production often begins with many smallholder farmers. Freshly harvested cherries are brought to a washing station, where they are collected, sorted, and processed into a single lot.
However, high-quality cherries alone do not guarantee a high-quality cup. Cherry selection, fermentation, drying, and moisture control all need to be carefully managed.
SNAP Specialty Coffee operates its own washing stations and oversees the process from cherry selection to drying. By managing fermentation time, moisture level, and drying conditions with consistency, SNAP produces coffees with clean acidity and refined expression.
DANCHE
Danche is a washing station located in Chelbesa Village. Cherries harvested in the surrounding area are processed here.
Since 2019, SNAP Specialty Coffee has purchased only fully ripe cherries for Danche. The cherries are processed under a consistent standard, even though they come from many smallholder farmers.
The fermentation tanks are made with ceramic materials, which help maintain stable heat and support even fermentation. This contributes to the coffee’s clean, transparent cup profile.
